These cutting boards are end grain using different species of hardwood including walnut, yellow heart, purple heart, cherry, hickory, white oak, Chechun, red heart and maple. To clean the boards use dish soap and water and dry with a paper towel. The boards need to be maintained with food grade mineral oil applied at least once a month or more often depending on usage. The wood will start to fade in color as they dry and this is an indication that the need to be oiled. Do not place the boards in the dishwasher and do not use bleach or acidic cleaners as this will dry out the wood and cause them to shrink and crack. There has been research stating that wood boards have the highest antimicrobial properties of any material man made or otherwise. The boards are also easier on your knives. Applying mineral oil causes the wood grain to swell and helps to reduce knife marks. One of the neat things about my boards is the pattern goes through the complete thickness of the board so if and when you do not like the appearance of the board you can sand out the knife marks.
